So living in AZ in your typical food store there is no Goya products, however there is the an Asian store called Leelee and this place has everything for every culture. There is a whole aile, its huge, dedicated to Goya products. Its heaven sent for us. We use on a daily bases Adobo and sazon, however i love the Mojo to marinate. So As i was making chix tonight I decided why not try to make yellow rice also. At first I swore i'll never make yellow rice and to leave that to my in laws but Emerald showed me briefly what Sofrito was, which is the main ingredient in the rice. So with what i had at home I MADE HOMEMADE SOFRITO!!!! can't you tell how excited I am. Sooooo i put together this amazing Puertorican yellow rice from scratch. My mother in law would be proud. Angel loved it. I am just so proud of myself and now am confident with my rice cooking. Yay me. I dedicate this to Maria Pena and Lady Gonzalez for making the best yellow rice there is.

You just made me so hungary! If I knew how to prepare it, I would only eat Spanish food. End of story. :-)
